What to do when using the calabash (dried gourd shell) for the first time?
An example from Argentina: First, take standard charcoal briquettes, such as those used to light a charcoal grill, ignite them, and let them glow in the calabash for 30 seconds. Then, add 2 tablespoons of yerba mate with hot water to the calabash and let it steep for 3 days. Pour it out and then repeat the process with 2 tablespoons of yerba mate and hot water, letting it steep for another 3 days. Only on the 7th day is the calabash ready for the first fresh mate infusion.
