The East Frisians are among the "strongest" tea drinkers in the world, with a per capita consumption of approximately 3 kg per year, even surpassing the English. Due to the predominantly peaty soil, the water in this region is less than ideal for preparing tea. However, the East Frisians have mastered this problem excellently: firstly, they brew their tea accordingly "strong," secondly, only the best Assam teas are blended, and thirdly, sometimes a little something "clear" can find its way into the small teacups. The classic preparation: First, put a large, white rock candy (Kluntje) into the teacup, then pour the hot tea into the cup, and finally add fresh cream (no milk!) to the tea. But please do not stir; the cream must remain as a "cloud" in the cup. The tea is enjoyed "three-tiered." First, the slightly creamy upper part, then the middle, somewhat more tart area, and finally the sweet remainder in the cup.
