This Sencha does not yet come from the first First Flush picking, nor from the Gyokuro period. Between these two very significant quality peaks and in autumn, the “simpler” Senchas are picked. In contrast to Chinese green tea, the production of these Sencha standards is very elaborate. From the beginning of the (still) manual picking to the last drying (roasting) process, every single production step is carried out by high-tech machines. Compared to simpler Sencha qualities, this tea already has an intensely tart and grassy taste.
