Grown at an altitude of 1600 m in northern Taiwan, with many tips carefully hand-picked at sunrise. Only a few tea makers still master the art of perfect Oolong tea production today. The absolute top harvests are still laid out as green leaves to wither, then hand-roasted in small copper pans over an open fire, and finally sun-dried. This elaborate production process takes several hours and gives this premium variety its uniquely fine, "sparkling-effervescent", champagne-like taste. Hence its name "Champagne of Teas".
